Friend’s kitchen–”Lazy dragon roll” (懒龙)by Xin yangyang

Xin yangyang‘s recipe – a traditional Beijing local delicacies –  “Lazy dragon roll”

Ingredients

500g all-purpose flour

300g ground pork

1 cup chopped green onions

1/2 cup chopped mushrooms

2 fried eggs, chopped.

1 tablespoon chopped ginger

1 tablespoon soy sauce

1 teaspoon dark say sauce(or a tablespoon sweet bean sauce)

1 teaspoon white pepper

1 teaspoon Five spicy powder

1/2 teaspoon sugar

1 teaspoon salt

Few drops sesame oil

Directions:

1. Pour warm water in flour, knead into a smooth dough, then place the dough in a bowl, set aside for 40 minutes, covered with wet paper towel.

2. Put all other ingredients in a bowl, mix well.  set aside.

3. Take out the dough, knead by hand, and then roll the dough with rolling-pin into a flat, square, 1/2cm thin big wrapper. evenly covered with the meat mixture, the way as if making pizza.

      

4. Fold the pizza into a big meat roll(see picture). set aside for 10 more minutes.

5.Remove the meat roll to steam pan, steam for 15 minutes over high heat. cut into half and serve immediately with any kind of dip you like (we usually have lazy dragon with Jiaozi dip)
