Suan la shredded potatoes 酸辣土豆丝

Prep: 15 minutes  Cook: 5 minutes  Makes: 1 serving


2 middle-size potatoes, shredded.

1 tablespoon green onions, chopped.

1 tablespoon dry chilli, chopped.

1 clove garlic, finely diced.


5 tablespoons cooking oil

6 Chinese pepper corns

3 tablespoons vinegar

1/4 cup water

1 teaspoon sesame oil

1/3 teaspoon sugar

Salt and white pepper to taste

1/2 teaspoon cumin powder (optional)


1. Heat oil in a wok/skillet over middle-high heat, put pepper corn in the wok and cook until it turn brown. remove it.

2. Turn the heat to high, then place shredded potatoes in the oil, quickly stir and cook until begin to turn tender.

3. Add chopped chilli, garlic and cumin powder, cook and stir 30 more seconds, then pour vinegar in the potatoes, stir and mix well.

4. Season with salt, white pepper and sugar, quickly stir and mix well, then pour water into the potatoes, keep stir and cook about 30 seconds or until the sauce turn thick.

5. Turn off the heat. Pour a few drops of sesame oil, mix well.

6. Serve with green onion on the top.


  • The flavor will be a bit bitter if overcooked the pepper corn. so cook over low or middle-high heat, and remove when its color begins to turn brown.
  • Wash the shredded potatoes twice or more to avoid it make the sauce too thick when cooking.
  • Keep the shredded potatoes in water before cook it, to avoid its color turn black.
  • I don’t recommend use scraper tool to shred potatoes, the flavor will be big different compared with hand cut.





1. 用中火将油烧热,放入胡椒粒炸到颜色开始变成棕色,把胡椒粒取出来扔掉。

2.  改大火,放入土豆丝,快速翻炒知道土豆丝开始变软。

3. 加入干辣椒圈,蒜末,孜然粉,翻炒30秒,然后倒入醋,翻炒均匀。

4. 用盐,白胡椒粉和糖调味,翻炒均匀,然后加入水,在翻炒30秒或者知道水开始变得粘稠。

5. 关火。加几滴香油翻拌均匀。

6. 装盘,撒上葱花。


  • 胡椒粒不要炸过头,如果颜色变黑了味道会有点苦;
  • 土豆丝切好后再洗两三遍,淀粉太多的话汤汁会太粘稠;
  • 土豆丝切好后保持放在水中,不然颜色会变黑。
  • 不建议用刮丝工具刮土豆丝,因为跟手切的土豆丝炒出来味道区别较大。

I’ve never heard from any of my Chinese friend saying that they don’t love this dish, it’s a easy, fast, and typical Chinese home-cooking food! please let me know if you try it at home, I’d like to know what do you think of it!
