Friend’s kitchen – Fried egg and whitebait by Cathay
Prep: 10 minutes Cook: 10 minutes Makes: 1-2 servings
200g whitebait (Whitebait is a kind of white fish that quite small, you can use any kind of fish that you like)
4 beaten eggs.
Chinese parsley, cut into sections.
1/2 teaspoon salt
5 tablespoons cooking oil
1 teaspoon corn starch, mix with 2 tablespoons water.
1. Beat eggs in a bowl, add salt, Chinese parsley, mixture of corn starch and water, whitebait, mix well.
2. Heat oil in a wok/skillet over middle-high heat, pour the egg whitebait and parsley mixture in the wok, cook for a few minutes until the edge of the egg begin to turn to golden, turn it over, cook until it’s golden brown on two sides and cook through.
3. Remove the egg cake from wok to a plate, cut into 8 pieces, garnish with Chinese parsley leaves on the top.
